Enjoying Healthy Food Some people refer to the highly nutritious soya beans as "meat of the fields", since they provide so much protein. Bean curd, or tofu is mainly principally of beans, and is gaining in popularity overseas as a healthy food. Let's look at some of the main types of tofu and some simple bean curd dishes. |

| 豆腐の種類 Variety of Tofu | |||
| ●絹ごし豆腐 名の通り絹のようになめらかでやわらかい豆腐。 |
●Kinugoshi ("Silk-thread" bean curd) As the name suggests, this fine grained tofu is smooth and soft like silk. |

| ●木綿豆腐 木綿の布で包み圧力をかけ、固めに仕上げた豆腐。 |
●Momen-dofu This is tofu wrapped in cotton cloth and pressed to give it a hard outer layer. |

| ●焼き豆腐 木綿豆腐の表面を直火で焼いたもの。 |
●Yaki-dofu Momen-dofu broiled over an open flame, to cook the outer layer. |
||
| ●厚揚げ豆腐 木綿豆腐を油で揚げたもの。 |
●Atsu-age Pronounced "atsu ah gay", these thick skinned bean curds are fried in oil. |

| ●油揚げ 薄い豆腐の生地を油で揚げたもの。 |
●Abura-age Thin strips of fried tofu cooked in oil. |

| ●高野豆腐 豆腐を冷凍乾燥させたもの。水で戻して使います。 |

| みんなで湯豆腐Let's Make Yudofu (boiled bean curd) | |||
1.まず豆腐2〜3丁と15pほどの昆布、薬味用に刻んだ長ネギとかつお節、つけ汁用に醤油、みりんを用意します。

1. Prepare 2 to 3 packs of bean curd, kombu (thick seaweed) cut in 15cm lengths, chopped long spring onions and dried bonito for flavoring, soy sauce and sweet sake to make a sauce for dipping. | ||
| 2.つけ汁は醤油2、みりん1の割合。これを温めて、食べる直前に薬味を加えます。 | 2. Make the dipping sauce with soy sauce and sweet sake in a proportion of 2 to 1. Warm the sauce and add the flavoring before serving. | ||
| 3.鍋に昆布を敷き、たっぷりの水を入れて加熱します。煮立ってきたら6〜8つに切った豆腐を入れ、豆腐がゆらゆら動き始めたら食べ頃です。 | 3. Lay the kombu in the pot, add a gen-erous amount of water to the pot and then heat it. Cook to a boil and then add 6 to 8 cubes of tofu. It will be ready for serving when the water comes to a medium rapid boil. | ||

| ・冷やっこ[Hiya-yakko] 夏の豆腐料理の代表格。豆腐にネギ、しょうがなどの薬味をのせます。 A typical cold tofu dish for the summer. Spring onion, ginger, and other ingredients are sprinkled on the cold tofu for variety. |
・すき焼き[Suki-yaki] 和食の代表メニュー。これには、焼き豆腐がマッチします。 A typical Japanese dish. Broiled tofu is suitable for this dish. |

| ・いなりずし[Inari-zushi] すしめしをだしにつけた油揚げでくるんだもの。行楽の友です。 Great for picnics, this is sushi rice wrapped in fried tofu skin. |
・煮付け[Nitsuke] 季節の野菜などと一緒に凍り豆腐を甘辛く煮付けます。 Dried tofu cooked with seasonal vege-tables in a mild to spicy sauce. |
